Ingredients:

1 cup red lentils (masoor dal, washed & drained)

1 large onion (finely chopped)

2 medium tomatoes (chopped or pureed)

3 garlic cloves (minced)

1-inch ginger (grated)

2 green chilies (optional)

2 tbsp vegetable or coconut oil

1 tsp cumin seeds

1 tsp turmeric powder

1 tsp coriander powder

1 tsp cumin powder

1 tsp garam masala

1 tsp chili powder (adjust to taste)

4 cups water or vegetable broth

Salt to taste

Β½ cup coconut milk (optional for creaminess)

Fresh cilantro leaves for garnish

Instructions:

1. Heat oil in a pan and add cumin seeds. Let them splutter.

2. Add onions and sautΓ© until golden brown.

3. Mix in garlic, ginger, and green chilies. Cook for 2 minutes.

4. Add tomatoes and cook until soft and oily.

5. Add turmeric, coriander, cumin, chili powder, and salt. Stir well.

6. Add lentils and mix with the spices.

7. Pour in water/broth and boil. Then simmer for 20–25 minutes until soft.

8. Stir in garam masala and coconut milk. Cook for 5 minutes.

9. Garnish with fresh cilantro.
